Ingredients
- 1 1/ cups chopped Pineapple
- 2 eggs
- 1/2 cup vegetable oil
- 3/4 cup sugar
- 2 cups plain flour
- 1/2 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon nutmeg powder
- 1/2 teaspoon salt
- 1/2 cup sweetened coconut
- 3 tablespoons walnuts or pecans
- They used low sugar chunky pineapple preserves for picture

Preparation
Step 1
In mixing bowl beat eggs until fluffy
Add oil and sugar and beat until light.
Mix dry ingredients and add to wet mixture until just combined.
Add pineapple and combine by hand.
Spoon batter into small bundt muffin pans and put in middle of oven
rack at 350 degrees for 50 to 55 minutes or until knife inserted comes out clean.
