FEATHERWEIGHT CAKE

UC cookbook - church in Manitoba claims they are often asked to provide this cake when they cater

Ingredients

• 1 cup milk
• 2 tbsp butter
• 4 eggs
• 2 cups white sugar
• 2 cups sifted flour
• 1/2 tsp salt
• 2 tsp baking powder
• 2 tsp vanilla

Preparation

Step 1

Mix together milk and butter and heat to boiling point. Beat together eggs and white sugar, add to hot milk. Sift together flour, salt and baking powder, add to batter. Add and beat in vanilla.

Grease a 9x13 inch pan and bake cake for 35 minutes at 375. While still hot, cover with the following:

Beat together until thick:

4 tbsp melted butter
5 tbsp brown sugar
1 tbsp cream
1 cup coconut

Spread on cake and brown under broiler.
