Ingredients
- Crust:
- 1 cup flour
- 1/3 cup shortening
- 2 tbsp water
- Topping:
- 4 tbsp butter
- 3/4 cup sugar
- 1 egg
- 1 tsp vanilla
- 2 cups coconut
- 1/2 cup raspberry jam

Preparation
Step 1
Cut shortening into flour until crumbly. Sprinkle water over and blend. Pat into an 8x8xw inch pan. Bake at 425 degrees for 15 minutes. Remove from the oven. Lower the oven temperature to 350 degrees. Cool the crust.
Cream butter with sugar until fluffy in a medium sized bowl. Beat in the egg and vanilla. Fold in coconut. Spread crust with the jam. Top with the coconut mixture. Bake at 350 degrees for 25 minutes or until golden on top. Cool completely.
