Ingredients

  • 1 1/2 cups flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1 tablespoon minced fresh flat-leaf (Italian) parsley
  • 1/2 teaspoon dried basil or oregano
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil

Step 1

In a large bowl, whisk together flour, sugar, baking powder, parsley, basil or oregano and salt. Set aside.

In a medium bowl, whisk together egg, milk and oil until blended. Stir into flour mixture until just blended.

If desired, place paper liners in wells. Fill each well with about 1 1/2 tablespoons batter. Bake for 6 to 8 minutes or until a tester inserted in the center of a muffin comes out clean. Transfer muffins to a wire rack to cool. Repeat with the remaining batter.
