Ingredients
- 5 lbs. white fish & pike(11/2 yellow pike 31/2 whitefish)
- 3 eggs
- 1/4 cup cold water
- 5 medium sized onions
- 3 carrots
- 1/2 matzah meal
- salt & pepper
- sugar( in water)
- for 10 lbs 7 lbs white fish & 3 lbs yellow pike

Step 1
Have fish filleted , skinned, and boned. In a large pot put 2 sliced onions( or 1 large onion), 2 large carrots, the skins, bones, and heads of fish. Season with 1 tbsp. coarse salt, 1 tsp pepper and 2 tbsp sugar Pui water in to cover all ingredients and boil slowly for 11/2 hours. while preparing the fish balls.
Use wooden bowl & chopper. Cut 3 onions and 1 small carrot and grind in with fish(ground_ in a large bowl. Add 3 eggs, 2tbsp salt, 1 tsp pepper, 1 tbsp sugar and mix well. Add 1/4 cup water & 1/2 cup matzah meal to make a good consistency so that the mixture holds well together. Add more matzah meal if necessary . Mix well. Chop fish as you add ingredients.
Strain the liquids from the pot and use this liquid for the cooking of the fish. This method will give you more room in the pot for the fish balls, it will be less crowded and there won't be so much of a mess later on when removing the fish from the pot. Let water cool before adding fish balls in luke warm water. Be sure to wet hands before making the fish balls and place them carefully in the pot. Make sure the liquid covers all pieces of fish. You can add more water if necessary. Slowly boil fish for 3 hrs. (shaking pot slightly while cooking). Cool and remove from pot and pour liquid over it to make the jelled sauce that is so delicious with it.
