Ingredients

  • 4 boneless pork loin chops
  • 1/2 tea. salt
  • 1/8 tea. pepper
  • 1 Tbsp. olive oil
  • 1 onion, sliced
  • 2 Tbsp. grainy mustard
  • 3/4 cup chicken broth
  • 1 Tbsp. prepared horseradish
  • 2 Tbsp. cornstarch
  • 1/2 cup sour cream
  • 2 Tbsp. Dijon mustard

Step 1

Sprinkle chops with salt and pepper. In a large skillet, heat oil over medium heat. Add chops; brown, turning once, for about 4-6 minutes.

Place onions in the bottom of a 3 qt. slow cooker. Add a layer of pork chops, then spread some of the grainy mustard over. Repeat, using the rest of the pork chops and the mustard.

Add broth to slow cooker. Cover and cook on low for 7-8 hours or until chops are tender and register 155 degrees.

Remove chops and cover to keep warm. In a small bowl, combine horseradish, cornstarch, sour cream, and Dijon mustard; mix well. Pour into slow cooker and stir well.

Return chops to slow cooker, cover, and cook on high for 30 minutes until sauce is thickened.

Serve immediately.
