Ingredients
- 2 Envelopes unflavored gelatin
- 3/4 cup sugar
- 2 eggs separated
- 1 1/2 cup skim milk
- 1 1/2 Tablespoons lemon juice
- 1 1/2 teaspoon grated lemon peel
- 3 cups low fat creamed cottage cheese
- 1/3 cup graham cracker crumbs (5-6)
- 1 /4 teaspoon cinnamon
- 1/8 teaspoon nutmeg

Preparation
Step 1
In a saucepan mix gelatin and 1/2 cup sugar. Blend in egg yolks beaten with 1 cup milk. Sit over low heat until gelatin dissolves, about 5 minutes. Add remaining 1/2 cup milk, lemon juice and peel. In a large bowl beat cottage cheese until smooth. Gradually beat in gelatin mixture. Chill stirring occasionally until mixture mounds slightly when dropped from spoon.
In a large bowl beat egg whites until soft peaks form. Gradually add remaining sugar and beat until stiff. Fold in cheese mixture. Turn into 8x9 spring form pan. Sprinkle top with graham crackers mixed with cinnamon and nutmeg.
