Ingredients

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 1/2 tea. dried thyme
  • 4 cups vegetable broth
  • 2 cups water
  • 1 1/2 cups brown lentils
  • 1/2 tea. salt
  • 1/4 tea. pepper
  • 1 (14 oz) can diced tomatoes, undrained
  • 1/4 cup chopped flat-leaf parsley
  • 1/4 cup grated parmesan cheese

Preparation

Step 1

In 4 qt. slow cooker, combine onion, garlic, carrots, thyme, broth, water, lentils, salt and pepper. Cover and cook on low for 7-08 hours or until lentils are tender.

Add tomatoes and stir. Cover and cook on high heat for 20-30 minutes or until stew is hot and blended. Top with parsley and cheese and serve.
