Ingredients

  • 1 1/2 c tomato juice
  • 3/4 c distilled white vinegar
  • 1 T plus 1 1/2 t Worcestershire sauce
  • 1 T firmly packed dark brown sugar
  • 1 bay leaf
  • 1/2 t salt
  • 1/4 t each red pepper powdered mustard
  • Dash pepper or to taste
  • 3 lb.s skinned chicken parts
  • 1 c thinly sliced onions2 T sugar

Preparation

Step 1

Preheat oven to 350
In saucepan, combine all ingredients except chicken and onions.
Cook over medium heat, stirring frequently, until flavors are blended (5-10 minutes).
In 13 X 9 X 2 inch pan, arrange chicken parts in an even layer, top with onion slices.
Cover evenly with tomato juice mixture.
Bake, basting frequently, until chicken is cooked through (about 50 minutes to 1 hour).
Remove and discard bay leaf before serving.
