  • 2 C unbleached all-purpose flour
  • 1 C confectioners' sugar
  • 12 T cold unsalted butter, cut into pieces
  • 1/2 tsp salt
  • 2 eggs

Step 1

Combine the flour, sugar, butter, and salt in a food processor. Process for 15 - 20 seconds until the mixture resembles oatmeal. Add the eggs one at a time and process for 20 seconds until the pastry just holds together.

Press the dough evenly into a 10 or 11 inch tart pan with a removable bottom. Wrap in plastic wrap and chill for 1 hour.

Preheat oven to 350F.

Remove the plastic wrap and press aluminum foil over the shell. Fill with pastry weights or dried beans and bake for 18 minutes. Remove foil and weights and bake until golden brown, another 7 minutes or so.

Cool on rack before filling.
