Ingredients

  • Crust:
  • 1 cup 1 cup sifted flour
  • 1/2 cup 1/2 cup quick cooking oats
  • 1/2 cup 1/2 cup brown sugar, packed
  • 1/2 cup 1/2cup butter, softened
  • Filling:
  • 1 can 1 can pumpkin (2 cups)
  • 1 large can 1 large can evaporated milk (12 ounces)
  • 2 2 eggs
  • 3/4 cup 3/4 cup white sugar
  • 1 teaspoon 1 teaspoon cinnamon
  • 1/2 teaspoon 1/2teaspoon ground ginger
  • 1/2 teaspoon 1/2 teaspoon ground cloves
  • Topping:
  • 1/2 cup 1/2cup chopped pecans
  • 1/2 cup 1/2cup brown sugar, packed
  • 2 Tablespoons 2 Tablespoons butter, softened

Preparation

Step 1

Using pastry blender, combine crust ingredients until crumbly. Press into 13x9 pan and bake at 350 15-20 minutes. Combine filling ingredients and pour over hot crust and bake 20 minutes more. Combine Topping ingredients and sprinkle over pumpkin and bake 15 to 20 minutes or until set. Can use as bars or top with whipped cream for a dessert.
