Ingredients

  • 1 Tbsp. butter
  • 1 Tbsp. olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 Tbsp. flour
  • 1/2 tea. salt
  • 1/8 tea. pepper
  • 1/8 tea. nutmeg
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 1 (3 oz) pkg. cream cheese, cubed
  • 1/2 cup riccota cheese
  • 5 russet potatoes, peeled, sliced 1/8" thick
  • 1 1/4 cups diced swiss cheese
  • 1/4 cup grated parmesan cheese

Preparation

Step 1

In large saucepan, melt butter with olive oil over medium heat. Add onion and garlic; cook and stir until tender, about 6 minutes.

Add flour, salt, pepper, and nutmeg to onion mixture; cook and stir until bubbly. Add milk and cream all at once, stirring with wire whisk; then add cream cheese and ricotta cheese. Cook and stir until cheese melts and mixture is smooth.

Spray a 3 1/2 qt. slow cooker with nonstick cooking spray. Layer 1/3 potatoes and swiss cheese in slow cooker. Pour 1/3 of cheese sauce over. Repeat layers, ending with cheese sauce.

Sprinkle with parmesan cheese. Cover and cook on low for 8-9 hours or until potatoes are tender.
