Ingredients

  • 1 Tbsp. vegetable oil
  • 1 onion, chopped
  • 1/2 lb. boneless pork chops
  • 1 (14 oz) can diced tomatoes, undrained
  • 1/2 tea. dried oregano
  • 1/2 tea. salt
  • 1/8 tea. crushed red pepper flakes
  • 1 1/2 cups water
  • 1 cup enchilada sauce
  • 1 cup chicken broth

Step 1

Heat oil in a saucepan over medium heat and cook onion until crisp-tender. Meanwhile, cut pork chops into 1" pieces, discarding excess fat. Add to pan; cook and stir until pork is browned, about 4 minutes.

Add along with remaining ingredients to 3 q.t slow cooker. Cover and cook on low for 7-8 hours or until pork is thoroughly cooked and mixture is slightly thickened.

Garnish with fresh cilantro, tortilla chips and sour cream.
