Ingredients
- 1 onion, chopped
- 3 cloves garlic, chopped
- 1 (4 oz) can chopped green chiles
- 1/3 cup chopped cilantro
- 1 green bell pepper, chopped
- 1 1/2 lb. boneless, skin-on chicken thighs
- 1/2 tea. salt
- 1/2 tea. garlic pepper
- 2 Tbsp. vegetable oil

Step 1
In a blender, combine onions, garlic, green chiles, cilantro and green pepper. Blend until mixture is smooth; set aside.
Sprinkle chicken with salt and garlic pepper. Heat oil in skillet and brown chicken, skin side down. As chicken browns, remove it to a 3 1/2-4 q.t slow cooker.
When all chicken is browned, add onion sauce to skillet. Cook and stir to remove browned bits from bottom of skillet. Pour over chicken, cover and cook on low for 8-9 hours until chicken is tender and thoroughly cooked.
Shred chicken, removing skin if desired, and return to sauce.
