Potato and Cauliflower Salad 1 Picture

Ingredients

  • 3 small potatoes, peeled and cooked
  • 1 head cauliflower, separated into florets
  • 4 tablespoons olive oil, divided
  • Salt and pepper to taste
  • 1/2 Kielbasa sausage (optional)
  • 1 clove garlic, minced
  • 2-3 sprigs fresh thyme
  • 1 cup plain whole milk yogurt
  • 1/2 tablespoon lemon juice

Preparation

Step 1

1. In a skillet over medium-high heat, cook and stir cauliflower florets in 2 tablespoons olive oil for 5-8 minutes. Add 1 tablespoon water, simmer and stir. Cook until tender-crisp. Add salt and pepper. Transfer to large bowl and set aside.

2. In the same skillet, heat 1 tablespoon olive oil over medium heat. Add sausage, if desired, and cook for 7-10 minutes until brown and cooked through. Set aside and let cool.

3. Cut potatoes in bite-size pieces and place in bowl with cauliflower.

4. Cut sausage in bite-size pieces and add in the bowl. Add shallt, garlic, and thyme. Mix gently and add remaining oil.

5. In a small bowl, whisk yogurt and lemon juice. Pour this mixture over potato-cauliflower salad. Adjust seasoning if needed.
