  • 1 large sweet onion
  • 3 tablespoons butter or margarine
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 cups milk
  • 2 cups cheddar cheese
  • Snipped chives
  • Paprika

Preparation

Step 1

Remove skin form onion and chop coarsely to measure about 4 cups. Saute chopped onion in butter or margarine until tender but not brown. Blend in flour, salt and pepper. Add milk, bring to simmer, cooking and stirring until slightly thickened. Remove from heat. Add cheese, stirring until melted. Garnish with chives and paprika.
