  • 4 skinless, boneless chicken breast halves
  • 2 teaspoons garlic, crushed
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup ground rolled oats or bread crumbs
  • 1/4 cup grated Parmesan cheese

Preparation

Step 1

Preheat oven to 350° F.

In a small pot, warm the olive oil. Add the garlic and cook to blend the flavors. Remove from heat. Pour into a shallow dish.

In a separate dish, combine the ground oats and Parmesan cheese. Dredge the chicken breasts in the olive oil/garlic mixture and then in the oat/cheese mixture. Place in a lightly sprayed shallow baking dish.

Bake in the preheated oven for 30 to 35 minutes, until no longer pink and juices run clear.
