- 1 pkg. boneless chicken breasts cut into med/small pieces (if you like dark meat, you an also use boneless thighs)
- 1 onion chopped
- 16 small (baby) carrots chopped
- 1 red bell pepper chopped
- 4 garlic cloves, chopped
- 1 large can Hunts tomato sauce
- Seasonings
- salt, pepper and cayenne pepper all to taste
- 6 cups cooked rice (2 cups uncooked.)

Step 1
In a large dutch oven, saute the vegetables in 2 TB oil. Saute until tender or onions are clear. Add the garlis and stir. Saute about 3 min more. As the chicken, stirring frequently until all pink gone. Salt, pepper and cayenne to taste while sauteing.
Pour in the can of tomato sauce and stir. Cook on low heat for about 15-20 minutes. Stir frequently.
When the sauce is done, add to cooked , strained rice.
