Ingredients

  • Topping:
  • 2 tbsp gelatine soaked in 1/2 cup cold water
  • 2 cups sugar
  • 1/2 cup boiling water
  • 1/2 tsp almond extract
  • 1/2 cup blanched almonds
  • 1/2 cup glazed cherries
  • Base:
  • 1/2 cup butter
  • 1/2 cup icing sugar
  • 1 egg
  • 2 cups flour
  • 1/2 tsp vanilla

Preparation

Step 1

For the base, beat the butter and icing sugar together. Beat in egg and vanilla. Gradually beat in flour. Press into an 8x8 inche pan. Bake at 350 degrees until edges begin to turn golden. Cool.

Boil together sugar and water for at least 2 minutes or until it begins to be thick and syrupy. Remove from stove. Add gelatine mixutre. Beat with a rotary beater until frothy and stiff. Add almond extract, blanced almonds and cherries. Pour over the baked cold base. Set over night in the fridge.
