Ingredients

  • 1 (3 oz) pkg. ramen noodles, any flavor
  • 3 Tbsp. creamy peanut butter
  • 2 Tbsp. soy sauce
  • 1/2 tea. ground ginger
  • 1 Tbsp. cider vinegar
  • 1 Tbsp. sesame oil
  • 1/2 tea. maple syrup
  • cayenne pepper to taste, optional
  • 2 green onions, sliced

Preparation

Step 1

Remove seasoning packet from ramen package and discard or reserve for another use.

In a small saucepan over high heat, bring 2 cups water to a boil. Break up noodles and add to boiling water; cook for 3 minutes or until tender. Drain and return to saucepan.

While noodles are hot, stir in peanut butter until melted. Add sot sauce, ginger, vinegar, oil. syrup and cayenne pepper, if desired; stir gently until well mixed.

Divide between serving plates and garnish with onions before serving.
