Ingredients
- 1 pound ground beef
- 2 medium onions
- 2 T. salad oil
- 1 (16 oz) can tomatoes
- 1 (8 oz) can tomato sauce
- 1 (6 oz) can tomato paste
- 1 green pepper, chopped
- 1 cup shredded cheddar cheese
- 1/2 t. oregano
- 1 t. salt
- 1/4 t. pepper
- 1/4 t. garlic salt
- 4 medium zucchini, sliced in 1/4 inch slices
- 1/2 cup grated Parmesan cheese

Step 1
Saute beef and onion in salad oil until meat is brown and crumbly. Add tomatoes, sauce, paste, and green pepper. Simmer for 10 minutes, stirring occasionally. Blend in cheddar cheese, oregano, salt, pepper and garlic salt. Add zucchini. Simmer for 10 minutes. Bake in 3 quart casserole for 45 minutes at 350 degrees. Sprinkle with grated Parmesan cheese and serve.
