Ingredients

  • Frosting:
  • 1/2 cup Crisco
  • 1 stick butter
  • 2 cups sugar
  • 2 cups flour
  • 1 cup buttermilk
  • 1 tsp. soda
  • 2 cups coconut
  • 1 cup chopped pecans
  • 5 eggs, separated
  • 1 package cream cheese, 8 oz.
  • 1 stick butter
  • 1 box powered sugar
  • 1 can evaporated milk

Preparation

Step 1

Beat egg white until stiff. Cream Crisco, butter, sugar. Add 5 egg yolks. Add flour and buttermilk to mixture alternating. Add coconut. Fold in beaten egg whites by hand. Add chopped nuts last. Bake in 3 greased and floured layer pans 20-30 minutes until done in 350 degree oven.

Frosting: Mix cream cheese, butter and powered sugar with enough of the evaporated milk to the consistency of frosting.
