Ingredients
- 2 teaspoons salt
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon thyme
- 1/4 teaspoon white pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 whole chicken
- 1 cup onions chopped

Step 1
In small bowl, thoroughly combine salt, paprika, cayenne pepper, onion powder, thyme, white pepper, garlic powder and black pepper.
Rub mixture into chicken inside and out, patting mixture to make sure it is evenly distributed and down deep into the skin. Place chicken in resealable plastic bag, refrigerate overnight.
When ready to roast chicken, stuff cavity with onions. Roast, uncovered, at 250 degrees about 5 hours, basting occasionally with pan drippings or until juices are caramelized on bottom of pan and chicken is golden brown.
