Ingredients

  • 1 pound lean ground beef
  • 1 green bell pepper -- chopped
  • 1 cup finely chopped onion
  • 1 large can diced tomato -- (29 ounce)
  • 1 can tomato sauce -- (15 ounces can)
  • 2 cans chicken broth -- (14 ounce cans)
  • 1/4 teaspoon thyme
  • 1/4 teaspoon sage
  • 1 cup cooked rice

Preparation

Step 1

In a large stock pot brown ground meat. Drain fat and add pepper and
onion.

* Cook until onion is translucent, not letting them brown.

*add tomatoes, tomato sauce, chicken broth, thyme sage and season season
with salt and pepper.

* Cover and simmer for 30 - 45 minutes, until peppers are tender.

* in another sauce pan boil 2 cups water, and add rice.

* Cook until rice is tender and add to soup.

* Heat soup through and serve.
