Ingredients
- ~2 lbs fresh baby spinach leaves
- 2 TB olive oil
- 3 cloves, garlice, sliced very thin
- two oranges
- 1/2 cup thinly sliced almonds, lightly toasted
- pinch of salt

Preparation
Step 1
Cut off the rind of the oranges with filet knife and remove sections. Squeeze out the juice from the remainder of the oranges and reserve.
Heat a large skillet over med-high heat. Add garlic to pan and cook until it just starts to turn brown - remove. (Do not let it get too much color).
Add spinach to the pan and cook for about two minutes, stirring occassionally until spinach is almost wilted.
Pour off excess water. Stir in almonds and orange sections and 1 TB of orange juice.
Season with salt
