Ingredients

  • Coating:
  • 5 lbs of deboned chicken breasts, cut in 1/2 or 1/3
  • Pepper strips
  • 1/2 cup flour
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 1/4 tsp pepper
  • Sauce:
  • 1 - 250 ml jar peach jam
  • 1/2 cup chopped onion
  • 1/2 cup barbecue sauce
  • 2 tbs soya sauce

Cooking time 70mins

Preparation

Step 1

1. Coat chicken with seasoned flour
2. Brown in butter or oil
3. Combine sauce and pour over chicken
4. Cover & simmer for 40 min or bake in oven at 350 F for 40 minutes.
5. Remove from oven, add pepper strips and cook for 10 minutes.
6. Serve on rice pilaf.

Note: Double sauce recipe for 10 lbs chicken to serve 10 people.
