Ingredients

  • 15 Lasagna noodles
  • 1 lb. Hamburger
  • 2 Tablespoons Olive oil
  • 4 cloves garlic
  • 2 cups onions
  • 2 28 oz. can crushed tomatoes
  • 2 eggs
  • 5 cups ricottaq cheese
  • 1 cup grated parmesan cheese
  • 12 fresh basil leaves, chopped
  • 1/4 Cup fresh oregano, chopped
  • 1 cup bread crumbs
  • 1/2 cup shredded mozzarella cheese

Preparation

Step 1

Preheat oven to 350 degrees. Cook in large pot lasagna noodles to just
al dente.Drain noodles and run cold water over them to stop cooking,
and set aside.

* Meanwhile in a large skillet, heat olive oil over medium heat. Add
garlic and onions and saute for 2-3 minutes. Add ground beef and
brown. Add tomatoes and reduce heat to medium low. Simmer for about
15 minutes. Add 1/2 the basil and oregano and stir to combined.

* In bowl beat eggs lightly and add ricotta cheese, parmesan cheese,
bread crumbs, and remaining basil and oregano and stir together.

* Lightly grease baking dish. Add enough sauce to lightly cover the
bottom of the pan.

* To assemble, on a drained noodle, add a #24 and a #40 scoop of the
ricotta mixture, and top with a #40 scoop of meat sauce and roll up.

* Place seam side down in pan. Continue until you've used all the
noodles. top each with a little more meat sauce and sprinkle with
mozzarella.

* Cover and bake a 350 for 60 to 90 minutes.

* Yields: 15 servings
