Ingredients

  • 1/4 cup canola oil
  • 1 large egg
  • 1 teaspoon vanilla
  • 1/4 cup packed brown sugar
  • 1 cup granulated no-calorie sweetener (like Splenda)
  • 1 cup low-fat buttermilk
  • 1 1/4 cups cake flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 cup Duch-process cocoa powder (like Hershey's European)
  • 2 teaspoons powdered sugar

Preparation

Step 1

1. Preheat oven to 350 degrees. Spray an 8 x 8-inch baking pan with non-stick baking spray.

2. In a large bowl, whisk toether the oil and the egg for 1 minute until the mixture is frothy and thick. Add the vanilla, brown sugar, and sweetener. Beat for 2 more minutes until the mixture is smooth and the sugars have been thoroughly incorporated into the mixture. Add the buttermilk and continue to mix.

3. Sift the flour, baking powder, baking soda, and cocoa powder. Whisk vigorously for 1 to 2 minutes until the batter is smooth. Add 1/4 cup hot water to the batter and whisk again until the batter is smooth. Pour the batter into the prepared cake pan and tap the pan on the counter to level the surface and removeany air bubbles.

4. Bake for 18 to 20 minutes or just until the center springs back when touched and a cake tester or toothpick comes out clean. Do not overbake. Place on a rackto cool. Dust with powdered sugar just before serving.
