  • 1 tbsp butter
  • 1 cup thinly sliced spring onions or scallions
  • 2 cups fresh peas
  • 1 tbsp chopped mint
  • zest of 1/2 lemon
  • salt
  • pepper

Preparation

Step 1

In a large skillet, melt the butter over low heat. Add the onions & 1/4 tsp salt. Cook covered stirring occasionally, until tender, about 4 minutes.
Stir in peas and 1 tbsp water. Cover and continue cooking until the peas are just tender, about 3-4 minutes. Remove pan from heat. Stir in the mint and lemon zest, and season with salt & pepper to taste.
