Ingredients

  • 1 dozen corn tortillas
  • 1/2 pound Jack cheese, grated
  • 1 1/2 cups tomato sauce
  • 1 1/2 cups low-fat cottage cheese
  • 1/2 cup chopped green onions, with tops
  • 1/2 tsp crushed oregano
  • 2 tsp chili powder
  • 1/4 cup oil
  • 1 tsp salt

Preparation

Step 1

Tear tortillas into pieces 2-inches square. Saute the onions in oil in a heavy 10- or 12-inch skillet until soft. Add chili powder, oregano and tortilla pieces. Stir frequently until tortilla pieces are soft and lightly coated with oil.

Blend cottage cheese with tomato sauce. When smooth, pour over tortillas, sprinkle with salt, and top with grated cheese. Cover the skillet and heat through until cheese is melted and sauce is bubbly.
