Ingredients

  • 6 cups sliced zucchini
  • 1/4 cup chopped onion
  • 1/2 cup condensed cream of chicken soup
  • 1/2 cup condensed cream of mushroom soup
  • 1 cup sour cream
  • 1 8-oz. package herb-seasoned stuffing mix
  • 1/2 cup butter, melted
  • grated Parmesan cheese, optional

Preparation

Step 1

Cook zucchini and onion in salted water until tender. Drain well. Combine soups and sour cream and fold into zucchini. Combine stuffing mix with melted butter. Spread a thick layer of stuffing in an 8x12 inch covered baking dish. Spoon zucchini mixture on top of stuffing. Top with remaining stuffing. Sprinkle generously with Parmesan cheese, if desired. Bake covered at 350 degrees for approximately 30 minutes.
