Ingredients

  • 1 recipe Pastry for Double-crust Pie
  • 6 cups thinly sliced, peeled cooking apples (2.25lbs)
  • 1 Tbsp lemon juice (optional)
  • 3/4 cup sugar
  • 2 Tbsp all purpose flour
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg

Preparation

Step 1

1. Prepare and roll out pastry dough for crust. Lin a 9-in pie plate with half of the pastry.

2. If desired, sprinkle apples with lemon juice. In a large bowl stir together the sugar, flour, and spices.
Add apples and gently toss to coat.

3. Transfer apple mixture to the pie dish. Trim bottom pastry to edge of pie dish. Cut slits in remaining pastry. Crimp edge if desired.

4. If desired, brush top pastry with milk and sprinkle with additional sugar. To prevent over-browning, cover edge of pie with foil. Bake @ 375 degrees for 40 min. Remove foil and bake 20 min. Cool on wire rack.
