Turkey tenderloins, sliced sweet potatoes, onions, apples and cranberries all roasted in the oven in the same dish. I pile it all on top of a bed of greens and make a big sweet salad out of it. YUM! No dairy, no soy, no egg, no nuts, no corn, no wheat, no gluten.

  • Turkey Tenderloins
  • 1 large Sweet Potato
  • 2 Red Potatoes
  • 1 large Fuji Apple
  • 1/2 large Sweet Onion
  • 1/2 cup Dried Cranberries
  • Olive oil
  • 2 Tablespoon BBQ Sauce

Preparation

Step 1

1. Preheat oven 400 degrees. Spray 9x13 pan with oil.

2. Peel and slice potatoes, apple and onion.

3. Add potatoes, apple, onion and cranberries to pan. Lightly spray with oil and add salt and pepper to taste.

4. Place turkey tenderloins on top of potato mixture. Brush turkey with BBQ sauce.

5. Cook until internal temperature of turkey is 170 degrees, approx. 45-55 minutes.
