Spicy and Saucy Tofu and Chicken Stir Fry

Ingredients
- 4 tsp canola oil
- 4 cloves garlic, minced
- 1 hot red chili pepper, seeded and finely chopped
- 1 lb ground chicken
- 1 can no slat diced tomatoes, drained
- 1 sweet red pepper, thinly sliced
- 1 pkg (454g) medium firm tofu drained, patted dry and cut in 1/2 in cubes
- 2 tbsp soy sauce
- 4 green onions, chopped
- could add mushrooms and medley of frozen corn, carrots and peas

Preparation
Step 1
Marinate tofu in soy sauce.
In large frying pan or wok, heat oil over medium-high heat, cook garlic and chili for 30 secs, stirring. Add chicken, cook, breaking up chicken until browned, about 5 minutes. Stir in drained tomatoes, pepper, tofu and soy sauce. Cook, stirring, until tofu absorbs all liquid, about 6 mins. Stir in green onions, cook for 2 mins.
