Spicy and Saucy Tofu and Chicken Stir Fry 0 Picture

Ingredients

  • 4 tsp canola oil
  • 4 cloves garlic, minced
  • 1 hot red chili pepper, seeded and finely chopped
  • 1 lb ground chicken
  • 1 can no slat diced tomatoes, drained
  • 1 sweet red pepper, thinly sliced
  • 1 pkg (454g) medium firm tofu drained, patted dry and cut in 1/2 in cubes
  • 2 tbsp soy sauce
  • 4 green onions, chopped
  • could add mushrooms and medley of frozen corn, carrots and peas

Preparation

Step 1

Marinate tofu in soy sauce.
In large frying pan or wok, heat oil over medium-high heat, cook garlic and chili for 30 secs, stirring. Add chicken, cook, breaking up chicken until browned, about 5 minutes. Stir in drained tomatoes, pepper, tofu and soy sauce. Cook, stirring, until tofu absorbs all liquid, about 6 mins. Stir in green onions, cook for 2 mins.
