Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/2 cup cold butter or margarine
  • 2 cups fresh berries
  • 2 large eggs
  • 2 large egg whites
  • 1 1/2 cups granulated no-calorie sweetener (like Splenda); divided
  • 5 tablespoons brown sugar, divided
  • 1 1/2 teaspoons vanilla extract
  • 1 cup light sour crean or low-fat plain Greek yogurt
  • 1/2 cup finely chopped walnuts
  • 1 teaspoon cinnamon
  • 2 teaspoons powdered sugar

Preparation

Step 1

1. Preheat the oven to 350 degrees. Lightly coat a 10-inch tube (or angel food) pan with nonstick baking spray.

2. To make the cake batter, whish together the flour, baking soda and baking powder large bowl. Add the butter and cut it in until it is thoroughly incorporated. Add the berries, mix gently and set aside.

3. In a medium bowl, with an electric mixer, beat the eggs, egg whites, 1 1/4 cups sweetener, and 3 tablespoons brown sugar together until the eggs double in volume and the mixture is light and foamy. Stir in the vanilla and sour cream. Make a well in the center and add the flour mixture. Use a large spoon to mix until just moistened and spoon batter into the prepared pan.

4. In a small bowl combine walnuts, 1/4 cup sweetener, 2 tablespoons brown sugar and 1 teaspoon cinnamon. Sprinkle over the top of the cake and bake for 45 minutes or until a toothpick inserted into the center comes out clean. Cool on a wire rack and dust with powdered sugar.
