Nancy's Mint Chocolate Chip Ice Cream

NOTE: Jack and Jenny loved this ice cream, but I thought it was too heavy on the mint flavoring, so next time I made it I used just 1/4 teaspoon instead of 1/2 tsp of mint extract.Makes about 1 1/2 - 2 quarts. Must be made in TWO batches in my ice cream maker which makes 1 1/2 quarts.

Ingredients

  • 2 eggs
  • 1 can Sweetened Condensed Milk
  • 1/3 cup sugar
  • 1 pint (2 cups) heavy cream
  • 1 pint (2 cups) half & half
  • 1/4 tsp salt
  • 2 1/2 Tbsps real vanilla extract (YES, 2 1/2 TABLESPOONS)
  • 1/4 tsp mint flavoring (not peppermint, mint)
  • 1/2-1 cup mini chocolate chips (semi-sweet) (Jack doesn't like TOO MANY!)

Preparation

Step 1

In large mixing bowl, whisk eggs. Add sweetened condensed milk and whisk together until well mixed. Add 1/3 cup sugar and again whisk until well mixed. Then add the pint of whipping cream, pint of half & half, 1/4 tsp salt, 2 1/2 Tbsps vanilla and 1/4 tsp mint flavoring. Mix all well.

For the very best results, cover and let "age" in the refrigerator for at least 4 hours. This allows the flavor to develop.

Make according to the directions for your ice cream freezer. Add the chocolate chips when the ice cream is almost done. Ice cream will be very soft. Turn into container(s) and freeze until proper consistency before serving.
