Oatmeal Cranberry Pancakes

Ingredients
- 1 1/2 cups milk
- 3/4 cup whole wheat flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp kosher salt
- 1/4 cup flax seed meal
- 3/4 cup uncooked rolled oats
- 1/4 cup dried cranberries
- 2 tbsp sunflower seeds
- 1 tsp cinnamon

Preparation
Step 1
Place first 6 ingredients into Vitamix in the order listed and secure lid.
Select Variable 1.
Turn machine on and quickly increase speed to Variable 10, then to High.
Blend for 20 seconds. Turn machine off and remove the lid.
Add oats, cranberries and sunflower seeds and replace the lid. (I also added cinnamon here)
Select Variable 1.
Turn machine on and blend for 15 seconds, using the tamper if necessary to press the ingredients into the blades.
Let batter sit fir 5-10 minutes before cooking to yield best texture and flavor.
** I'm sure this would work just fine in a Food Processor.
