Step 1
SOFT COOKED: Place unshelled, room temperature eggs in saucepan; add enough cold water to cover tops by at least 1". Cover; rapidly bring to boil.
Remove from heat, or if cooking more than 4 eggs, turn heat very low. Let stand, covered as below:
very soft eggs.. 2 minutes
medium soft eggs..3 -3 1/2 minutes
firm soft eggs..4 minutes
Promptly cool eggs in cold water a few seconds to prevent further cooking and to make handling easy.
Remove from shells as follows: Hold egg over heated saucer or cup. Hit sharply at center with cutting edge of knife. Insert thumbs in crack. Pull shell apart. With spoon, scoop out egg.
HARD COOKED EGGS:
Follow directions above in steps 1 and 2. Let stand for 15 minutes
Cool promptly and thoroughly in cold, icy water --this makes shells easier to remove and prevents dark surface on yolks.
To remove shells, tap entire surface of each egg to crackle it. Roll egg between hands to loosen shell, then peel starting at large end. Dipping egg into cold water will help ease off shell.
