Oven-Fried Chicken Parmesan

Ingredients
- 1/4 c. flour
- 1/2 t. dried oregano
- 1/4 t. salt
- 2 large egg whites, slightly beaten
- 3/4 c. panko breadcrumbs
- 4 (6 oz) skinless, boneless chicken breast
- 2 T. olive oil divided
- 1/2 c. tomato-basil pasta sauce
- 1/2 c. grated Parmesan cheese
- 3/4 c. shredded mozzarella cheese

Step 1
Preheat oven to 450.
Combine first 3 ingredients in a shallow dish; place egg whites in a bowl. Place breadcrumbs in a shallow dish. Dredge 1 breast in flour mixture. Dip in egg whites; dredge in breadcrumbs. Repeat procedure with remaining chicken, flour mixture, egg whites, and breadcrumbs.
Heat 1 T. oil in large ovenproof skilled over medium heat. Add chicken to pan; cook 2 minutes. Add remaining 1 T. oil. Turn chicken over; cook 2 minutes. Coat chicken with cooking spray; place pan in oven. Bake at 450 for 5 minutes. Turn chicken over; top each breast with 2 T. sauce, 2 T. Parmesan cheese, and 3 T. mozzarella. Bake 6 minutes or until chicken is done.
