Ingredients

  • 1 3/4 cup reduced-fat baking mix (like Heart Smart Bisquick)
  • 1/3 cup granulated no-calorie sweetener (or 8 packets)
  • 1/3 cup mini chocolate chips
  • 2/3 cup low-fat milk
  • 1 large egg, lightl beaten
  • 1 tablespoon canola oil
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon coconut extract
  • 1/4 cup sliced alonds or pecans, (optional)

Preparation

Step 1

1. Preheat oven to 350 degrees. Spray an 8-inch square baking pan with non-stick baking spray.

2. In a large bowl, combine baking mix, sweetener, and chocolate chips. Stir in milk, egg, oil, vanilla extract, and coconut extract. Stir just until smooth.

3. Pour into prepared bakingpan. Sprinkle with slice almonds, if desire. Bake for 12 to 15 minutes, or until the center springs back when lightly touched. Cool for 5 minutes before removing to a wire rack.
