Ingredients

  • 3/4 cup minced fresh cilantro
  • 1/4 cup minced fresh basil
  • 1/4 cup vegetable oil
  • 2 jalapenos, minced
  • 2 cloves garlic, minced
  • 3 Tbsp fresh lime juice
  • 2 Tbsp firmly packed brown sugar
  • 2 Lbs chicken tenderloins

Preparation

Step 1

1) Soak 16 to 20 (10-inch) wooden skewers in water to cover for 30 minutes; drain and set aside.

2) in a large bowl, combine cilantro, basil, oil, jalapenos, garlic, lime juice and brown sugar. Add chicken; cover and refrigerate for at least 2 hours or up to 6 hours.

3) Spray grill rack with nonstick nonflammable cooking spray. Preheat grill to medium-high heat.

4) Drain chicken, discarding marinade. Thread 1 chicken tenderloin on each prepared skewer. Grill tenderloins, covered with grill lid, for 3 to 4 minutes per side or until chicken is done.
