Stove-Top Tater Tot Dish

Ingredients
- 1/4 c vegetable oil
- 1 lb frozen Tater Tots
- 1 lb ground sirloin
- 2 Tbsp minced garlic
- 2 tsp paprika
- Dash of red pepper flakes
- 1 c diced onion
- 1 c quartered button mushrooms
- 2 c sliced fresh green beans
- 1 c heavy cream
- 1/2 c sour cream or Greek yogurt
- 1 Tbsp Worcestershire sauce
- salt and pepper to taste
- 1 c shredded Cheddar cheese
- 1 Tbsp minced fresh chives

Preparation
Step 1
Heat oil in a large cast-iron skillet over medium-high. Add Tater Tots and fry until browned, 8-9 minutes; transfer to a paper-towel-lined plate. Discard all but 1 Tbsp oil.
Add ground sirloin, garlic, paprika, and pepper flakes to skillet and saute until meat is browned, 3-5 minutes. Drain serloin from skillet through a sieve; discard drippings. Return sirloin to skillet.
Add onions and mushrooms to skillet; saute 2 minutes. Add green beans and saute 2-3 minutes more.
Stir in cream to sirloin mixture and bring to a boil. Simmer until thickened, 3 minutes. Whisk in sour cream and Worcestershire and season with salt and pepper.
Top mixture with Tater Tots. Sprinkle with Cheddar cheese and cover until melted, about 1 minute.
Garnish servings with chives.
* I baked the tater tots in the oven and set them aside until I put them on top.
** I doubled this recipe and didn't have too much left over after my family ate it.
*** I used 2 cans of green beans, instead of fresh.
