Step 1
Preheat oven to 250 degrees, put ribs on baking sheet, season with salt and pepper and drizzle with olive oil. Put in oven and bake for 1 1/2 hours. To make BBQ sauce, wrap 4 sprigs fresh thyme in two strips bacon and tie with string. Heat a 2 count of oil in large saucepan oven medium heat. Then add thyme bundle and cook slowly for 3-4 minutes to render th ebacon fat to give the sauce a nice smokey flavor. The add 1/2 onion and 3 smashed garlic cloves and cook slowly for about 5 minutes just do not burn garlic. Then add 2 c ketchup, 1 c peach preserves, 2 tbsp Dijon mustard or 1 tbsp dry mustard, 2 tbsp brown sugar, 1/4 c molasses, 2 tbsp red or white wine vinegar, 1 tsp cumin, 1 tsp paprika. Stir and turn heat to low and cook slowly for 20 minutes. Put some in bowl to baste ribs and other for dipping. Baste ribs , then baste twice more, for 30 more minutes. When tehy are done, remove from oven and let rest. When ready to eat, if they cooled down, can preheat broiler for 5 minutes and broil the ribs, basting with sauce. Five minutes on each side. I TRIED THIS ON 07/10 AND THEY WERE GOOD BUT I GRILLED RIBS, FOR TWO HOURS, NEED TO GRILL PROBABLY THREE OR FOUR. ALSO RE SAUCE, VERY GOOD BUT MAKE SURE TO COOK BACON A LONG TIME, I DID NOT AND DID NOT ADD MUCH FLAVOR. SAUCE VERY GOOD.
