Ingredients
- 3 cloves garlic
- 1/4 c. oil
- 1 lb. lean ground beef
- 1 8-oz. tomato sauce
- 1 6 oz. can tomato paste
- 3/4 c. dry red wine
- 1/2 c. water
- 1/2 t. oregano
- 1/4 t. basil
- 1/2 t. salt
- freshly ground pepper
- 1 12-oz. package spinach noodles
- 1 c. milk
- 3 T. butter
- 3 T. flour
- 6 T. light cream
- 1 c. grated Parmesan cheese
- 1 c. grated Gruyere cheese

Preparation
Step 1
Mince the garlic and place in a heavy saucepan with the oil. Cook over low heat until lightly browned. Add ground beef and stir with a wooden spoon to prevent burning. Add the tomato sauce and paste, wine, water, oregano, basil, 1/4 t. salt and pepper. Cover and simmer over low heat for 25 minutes. The sauce is done when oil rises to the surface.
Prepare noodles according to package directions.
Prepare bechamel sauce as follows: Scald the milk, Melt the butter in a skillet and stir in the flour. Slowly add the hot milk, stirring constantly over low heat for 3-5 minutes or until thickened. Remove from heat and stir in cream, 1/4 t. salt and pepper.
Drain the noodles and arrange in a well buttered casserole or ovenproof serving dish. Sprinkle with 3/4 c. Parmesan and 3/4 c. Gruyere. Pour the bechamel sauce over the noodles and sprinkle with remaining cheese. Heat in a 350 degree oven for 15-20 minutes.
