Halloumi is a semi-firm white cheese with a delicious creamy taste. Halloumi hails only from Cyprus. It can be grilled, broil, barbequed or sauteed.

Ingredients
- 6 tablespoons plus 2 teaspoons extra-virgin olive oil
- 8 ounces Halloumi, sliced into six 1/2 inch thick rectangles
- Juice of 1 lemon
- 2 cups - mixture of baby spinach and arugula
- 1 teaspoon dried Greek oregano

Preparation
Step 1
1. Heat 2 teaspoons of the oil in a large nonstick pan over moderate heat until browned, about 45 seconds per side.
2. Whisk together lemon juice, salt to taste, oregano, and remaining olive oil for the dressing. (Or, you may use a dressing of your choice.)
3. Combine arugula and spinach. Toss with 6 tablespoons of the dressing.
4. Transfer Halloumi slices to salad plates, drizzle with remaining dressing. Top each portion with a mound of salad.
