  • 16 ounces fettucini
  • 2 1/2 cups heavy cream
  • 1/4 cup lemon juice
  • 12 tablespoons butter
  • 2 cups grated Parmesan cheese
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste

Preparation

Step 1

Cook the pasta in a large pot until tender but still firm (about 4 minutes). Drain.

Stir and blend 2 cups heavy cream and lemon juice in a large skillet. Add butter and cook over medium heat just until the butter melts, stirring occasionally (about 3 minutes). Remove from heat.

Pour the sauce over the pasta and toss. Add the remaining 1/2 cup heavy cream, cheese, nutmeg, salt, and pepper. Toss until the sauce thickens slightly (about 1 minute).

Note:
• One pound of cooked chicken (cut into strips) or shrimp can be added.
