Ingredients

  • 2 lb. chicken pieces (all skin and yellow fat removed)
  • 1 t salt
  • 1/4 c lemon pepper
  • 1/2 t poultry seasoning
  • 1/2 c plain lowfat yogurt
  • 3 oz cornflakes - finely crushed

Preparation

Step 1

Blend seasoning with yogurt.
Coat all chicken pieces evenly.
Roll in cornflake crumbs, using all crumbs.
Place in foil-lined baking dish.
Bake at 400 for 40-45 minutes or until brown and crispy.

NOTE: If the yogurt mixture is too thick, add a small amount of skim milk.
