Ingredients
- 1/4 cup extra-virgin olive oil
- 8 thin slices pancetta, cut into strips
- 1 medium onion, cut into thin strips
- 1 lb boneless lamb sirloin, fat removed, cut into 1/2" cubes
- 1/2 cup dry white wine
- Salt and freshly ground black pepper to taste
- 2 tbsp finely chopped fresh mint
- zest of 1 orange

Step 1
In a skillet, heat the olive oil over medium-high heat, then cook the pancetta and onion until softer, stirring constantly, about 3 minutes. Add the lamb and brown for 3 minutes, stirring constantly.
Add the white wine, salt, and pepper and increase the heat to high while the sauce reduces. When the sauce is nearly gone, stir in the mint and orange zest and cook for 1 minute, stirring constantly. Remove from the heat and serve.
