Ingredients
- 1 c long grain white rice
- 2 cinnamon sticks
- 1 t orange zest
- 3 whole cloves
- 2 c water
- 1 egg yolk
- 3 c whole milk
- 1 (12 oz) can sweetened condensed milk
- 1 T vanilla extract
- 1/2 c raisins
- Ground cinnamon, for garnish

Step 1
Soak the rice, cinnamon sticks, orange zest and whole cloves with the water in a heavy saucepan for 1 hour.
Bring the rice mixture to a boil. Reduce the heat to a simmer and cook, uncovered, for about 10-12 minutes or until the water is almost evaporated.
Whisk together the egg yolk, whole milk, sweetened condensed milk and vanilla.
Add milk mixture and raisins to the rice and bring to a boil. Reduce the heat to a simmer and cook, stirring frequently, until the rice pudding thickens slightly, about 25 minutes. Remove the cloves.
Allow to cool a bit; the pudding will thicken slightly as it cools.
Spoon the warm pudding into bowls and garnish with a sprinkling of cinnamon.
